"Chap sui"
2 people:
- 1/2 a carrot.
- 1/2 a zucchini.
- 1/2 a broccoli.
- A fist of chapsui .
- 1/4 of bell pepper.
- 1/2 a cup of celery.
- 1/4 of an onion.
- Olive oil, pepper, soy sauce & sea salt at taste.
- Heat a skillet over medium heat for 1 minute.
- Add carrot and broccoli together with 1/4 of a cup of water to create steam. (Leave for 4 minutes)
- Make vegetables aside, add olive oil and leave to heat for 30 seconds.
- Add onion and let it caramelize.
- Then add the celery, zucchini, chile morron and chapsui.
- Stir everything well and cover the pan for all the vegetables to cook. (stir every minute that passes)
- While the vegetables are cooking, cut the chicken into small cubes.
- Add oil in another pan and let it heat for 2 minutes.
- Add the chicken and season with salt and pepper (to taste).
- Once the chicken is cooked, add it to the pan along with the vegetables.
- Last add "soy sauce" without soy "organic" to taste.
Fish & rice
One person:
- 1/4 a cup of white rice
- 1 tomato
- 1/2 a cup of water.
- 1/2 a chile serrano
- 1/4 of an onion
- Fish (depends)
- Asparagus (depends)
- Salt & pepper
Rice:
- Get the Tomato and put it in boiling water until it softens.
- Once the tomato is ready put it in the blender with the chile serrano, a little bit of water and salt at taste.
- Blend until everything is chopped evenly and you create a tomato salsa.
- Then heat a pot with a tea spoon of olive oil for 30 seconds.
- Put the garlic and onion in the pot and let caramelize.
- Add the rice and stir for five minutes.
- Add the tomato salsa, then the water and cover the pot until the rice cooks. (no water has to be left on the pot)
- Heat another pot with water and let boil.
- Put the asparagus in until they soften.
- Season the fish with salt and pepper.
- Heat a pan with olive oil for a minute.
- Put the fish in the pot and let cook from each side for 3 minutes.
- Taste everything after serving and serve.
"gorditas & beans"
8 people:
- A kilo of dough for 8 people
- 2 tomatoes
- 1/2 a red onion
- Cilantro at taste
- 1/4 of a chile serrano
- 2 lemons
- 1/2 of lard
Pico de Gallo:
- Cut the tomato and red onion into small cubes.
- Cut some cilantro and chile.
- Put everything in a bowl with lemon juice, salt & pepper.
- Heat up a pot and pour the jar of water into the pot.
- Put the 3 cups of beans into the water.
- Let cook for 30 minutes then add salt (at taste).
- Let it cook for another 30 minutes.
- Taste the beans before to see if they need more salt, if they do add it and let cool for 2 minutes, then serve.
- Knead the corn dough with warm water.
- Make a small ball with the dough and smash de ball to make it a little bit flat.
- Heat a pan for 2 minutes on medium heat, put the dough on the pan.
- Let the dough cook for 3 minutes on each side.
- With a fork poke the dough on top until de dough is cooked in the middle.
- Heat a small pot with the lard until it boils.
- Put lard on top of the gordita(dough).
- Add on top the pico de gallo.
- And is ready to eat.
- Serve beans on the side
"Meatball soup"

- Grab the ground meat, put some salt & pepper and 1/2 a cup of rice and mix all together.
- Make small or medium meatballs.
- Heat a pot with water and let boil.
- Put the meatballs inside the pot with water.
- Add garlic cloves & 1/2 an onion to the pot with water and meatballs.
- Cover the pot and let cook.
- In a pan, add some olive oil and let it heat por 30 seconds.
- Add tomato, 1/4 of an onion and chile serrano into the pan with olive oil.
- Mix for about 5 minutes and add it to the other pot with water and meatballs.
- Let cook for about 30 minutes.
- Then add zucchini, potato, & carrots, cut in average size bites.
- When the vegetables cook the meatball soup will be ready.
- Add some cilantro and serve.
"Ceviche"

- Peel the shrimp and rinse.
- Put the shrimp in a bowl and add the lemon juice (from the seven lemons).
- Add salt & pepper (at taste).
- Let it cool in the refrigerator for about 15-30 minutes or more.
- Cut all vegetables: cucumber, tomatoes, red onion & chile serrano in small cubes.
- Add all those ingridients to the bowl and mix.
- Add tomato juice and your ceviche is ready.

- 4 tbs Beans
- 1/2 of a Tomato
- Salt & Pepper
- 4 baby carrots cut in small pieces.
- 2 oatmeal tortillas
- Cut everything in small cubes.
- Add them to a bowl with some salt & pepper.
- Put it inside de tortilla and your taco is ready.
